
The computer screen, above, controls all of the tanks in the winery. Using the screen, we can monitor the amount of wine each tank contains as the fruit arrives from the vineyards. We can set the temperature and the number of we want to pump-over the wine. For each wine, we set up a different program that monitors the entire process. If there is any problem with a tank or a pump, the system will stop working and an alarm goes off (during the day) or a technician will be called on his cell. phone (if during the night). We designed the software ourselves and the entire process can be monitored and controlled remotely.
The green light on the panel above means everything is A-OK!
Keep posting about the process. This is fascinating to those of us who don't get involved in the "behind-the-scenes" parts of winemaking. It is interesting to see how different producers do things.
